Golden and nutty off dry Port, rich and a delicious aperitif. Malvasia Fina and other mixed Douro varieties go into this excellent off dry white port, the Rabbit! 100% foot trodden and aged in casks to produce a lovely fruity wine with delicious balance of alcohol, sugar and freshness. The soft pressing and resultant skin contact makes for a deep golden colour and the oxidative ageing adds to this and also adds extra layers of flavour and depth. This is a traditional style dry white Port, about 80mg/l of sugar so still with notable sweetness although much drier than red Ports.

Part of the Niepoort familys boundary-pushing NatCool project, this wine comes from Quinta de Baixo in the Minho region. Niepoort, founded in 1842, has long been known as a small but visionary Port house, now led by fifth-generation siblings Dirk and Verena Niepoort. What began as a niche operation has grown into one of Portugals most respected names, producing everything from traditional Ports to expressive natural wines across the Douro, Bairrada and Do. Dirks commitment to understanding soils, microclimates and native grapes has drawn the estate toward organic and biodynamic farming, with many vineyards now certified.
