The Story
If Sensation White is Emishiki's bright, fruity refresher, Sensation Black is the richer, more structured sibling. What sets it apart is the kimoto brewing method, a traditional, labor-intensive process that builds deeper acidity and a more complex flavor profile. It's brewed with Tamasakae rice (a local Shiga Prefecture variety) polished to 50%, and bottled undiluted as genshu. The kimoto gives it a firmness and mineral quality that the White doesn't have, while still delivering the approachable, refreshing character the Sensation line is known for.
Tasting Profile
Aroma: Fresh and green, with notes of young grass, green apple, and strawberry.
Palate: Soft, delicate sweetness that's reined in by a rising acidity. There's a rounded but firm mouthfeel, with hints of orange, vanilla, and rice bran. The kimoto method provides a mineral backbone and a pleasant savory edge.
Finish: Crisp, with a minerality and (very) mild bitterness that pairs well with food.

Serving Temperature: Chilled or at room temperature.
Food Pairings: The elevated acidity and structure give this a little more pairing potential than the White label. It pairs well with yakitori, grilled fish, or shellfish. It also works nicely with moderately spicy dishes and most western food.
Why We Love It
The Sensation series is designed to deliver serious quality at an affordable price point, and the Black label is where the brewery's traditional brewing chops really show. The kimoto method takes more time and more attention than modern brewing methods. The fact that Emishiki applies it to an accessibly priced bottle, rather than reserving it for premium releases, says a lot about how they approach brewing.
